Tilapia Ingredients
- 4 Large Tilapia Fillets
- 1/2 Cup All-purpose Flour
- 1 Teaspoon Dry Oregano
- 1 Teaspoon Dry Parsley
- Salt & Pepper
- 2 Tablespoons Butter
Topping Ingredients
- 1 Can Artichoke Hearts
- 1/2 Cup Olive Oil
- 1/4 Cup Fresh Squeezed Lemon Juice
- 1 Large Clove Garlic, Minced
- Salt & Pepper
- 1 Teaspoon Dry Oregano
- 1 Teaspoon Dry Parsley
Directions
- Prepare the artichokes by rinsing well, peeling off the harder outer leaves. Cut quarters in half.
- Place all topping ingredients in saucepan and simmer while cooking tilapia.
- Season the flour with oregano, parsley, salt and pepper, and lightly coat the fish fillets in the seasoned flour mixture.
- Heat the butter in a frying pan, and cook the fillets until golden brown on both sides.
- Serve each fillet topped with some of the artichoke mixture, and garnish with fresh parsley and lemon wedges.
