Tilapia with Artichokes

Tilapia Ingredients
  • 4 Large Tilapia Fillets
  • 1/2 Cup All-purpose Flour
  • 1 Teaspoon Dry Oregano
  • 1 Teaspoon Dry Parsley
  • Salt & Pepper
  • 2 Tablespoons Butter
Topping Ingredients
  • 1 Can Artichoke Hearts
  • 1/2 Cup Olive Oil
  • 1/4 Cup Fresh Squeezed Lemon Juice
  • 1 Large Clove Garlic, Minced
  • Salt & Pepper
  • 1 Teaspoon Dry Oregano
  • 1 Teaspoon Dry Parsley
Directions
  • Prepare the artichokes by rinsing well, peeling off the harder outer leaves. Cut quarters in half.
  • Place all topping ingredients in saucepan and simmer while cooking tilapia. 
  • Season the flour with oregano, parsley, salt and pepper, and lightly coat the fish fillets in the seasoned flour mixture. 
  • Heat the butter in a frying pan, and cook the fillets until golden brown on both sides.
  • Serve each fillet topped with some of the artichoke mixture, and garnish with fresh parsley and lemon wedges.
