Jeff’s Breakfast Goop
Ingredients
- 1 lb Bacon
- 3-4 Medium Potatoes, cubed
- Jimmy Dean Premium Regular Pork Sausage
- 1 Can Ro-Tel Original Diced Tomatoes and Green Chiles
- 2 C shredded cheese of your choice
- 1-2 Eggs per person
Optional Ingredients
- 1 Medium Onion, diced
- Mushrooms
- Black Olives
Directions
- Cook bacon in a large frying pan.
- Set bacon aside. Keep grease.
- Cook Jimmy Dean, crumbling it as it cooks.
- Set aside Jimmy Dean.
- Cook potatoes (and onions) in bacon grease.
- Add bacon and Jimmy Dean to the pan.
- Add entire can of Ro-Tel.
- Simmer to combine flavors.
- Top with Cheese and allow cheese to melt.
- While cheese is melting, fry eggs over easy.
- Plate the goop and top with fried eggs.
Yield: 4-6 servings
