Neckbone’s Breakfast “Goop”

Jeff’s Breakfast Goop

Ingredients
  • 1 lb Bacon
  • 3-4 Medium Potatoes, cubed
  • Jimmy Dean Premium Regular Pork Sausage
  • 1 Can Ro-Tel Original Diced Tomatoes and Green Chiles
  • 2 C shredded cheese of your choice
  • 1-2 Eggs per person
Optional Ingredients
  • 1 Medium Onion, diced
  • Mushrooms
  • Black Olives
Directions
  • Cook bacon in a large frying pan.
  • Set bacon aside. Keep grease.
  • Cook Jimmy Dean, crumbling it as it cooks.
  • Set aside Jimmy Dean.
  • Cook potatoes (and onions) in bacon grease.
  • Add bacon and Jimmy Dean to the pan.
  • Add entire can of Ro-Tel.
  • Simmer to combine flavors.
  • Top with Cheese and allow cheese to melt.
  • While cheese is melting, fry eggs over easy.
  • Plate the goop and top with fried eggs.
Yield: 4-6 servings
