Shepherd’s Pie

Ingredients
  • 8 medium Potatoes, peeled and quartered
  • 6 Tbsp Butter
  • 1/2 C Milk
  • 1 medium Onion, chopped
  • 1 cup Carrots, chopped
  • 1 1/2 lb ground beef
  • 1/2 C frozen Peas
  • 1/2 C frozen Corn
  • 3/4 – 1 C Beef Broth
  • 1 1/2 tsp Worcestershire sauce
  • Salt, to taste
  • Pepper, to taste
  • Garlic Powder, to taste
Directions
  • Place potatoes in a pot, cover with water, salt and boil until tender.
  • Melt 2 Tbsp butter in a pan.
  • Add onions and saute until slightly translucent.
  • Add carrots and saute about 5 minutes.
  • Add ground beef and cook until no longer pink.
  • Add peas, corn, worcestershire, salt, pepper and garlic powder.
  • Add beef broth and continue cooking on low heat for about 10-15 minutes. You may need to add more broth to keep meat moist.
  • Drain potatoes and mash with 4 Tbsp butter and milk.
  • Place beef mixture in bottom of 9×13 baking dish.
  • Cover with mashed potatoes
  • Bake at 400 degrees for approximately 30 minutes.
  • If potatoes aren’t browned, place under broiler for a few minute.
