Smoked Sausage and Cheesy Pasta

Delish. Easy and only one pot to clean, I used my dutch oven. I found this recipe online and modified it a bit. Makes about 4 servings.

Ingredients:

  • 1 tbsp olive oil
  • Smoked sausage
  • 1 cup diced onion
  • 1 tbsp minced garlic
  • 2 cups chicken broth
  • 1 15 oz can diced tomato
  • 1/2 cup milk or heavy cream
  • 8 oz dry pasta (penne was great)
  • 1/2 cup shredded smoked gouda cheese
  • 1/2 cup shredded sharp cheddar
  • Salt and pepper

Instructions

  • Add olive oil to bottom of dutch over with medium high heat.
  • Add onions and sausage. Cook until lightly browned. Add garlic and cook for 30 seconds.
  • Add chicken broth, tomatoes, milk, pasta, salt and pepper.
  • Bring the mixture to a boil, cover and reduce to low heat. Simmer for about 15 minutes or until pasta is tender.
  • Turn off the heat and stir in smoked gouda. Sprinkle remaining cheese on top and cover for about 5 minutes while cheese melts.
