Delish. Easy and only one pot to clean, I used my dutch oven. I found this recipe online and modified it a bit. Makes about 4 servings.
Ingredients:
- 1 tbsp olive oil
- Smoked sausage
- 1 cup diced onion
- 1 tbsp minced garlic
- 2 cups chicken broth
- 1 15 oz can diced tomato
- 1/2 cup milk or heavy cream
- 8 oz dry pasta (penne was great)
- 1/2 cup shredded smoked gouda cheese
- 1/2 cup shredded sharp cheddar
- Salt and pepper
Instructions
- Add olive oil to bottom of dutch over with medium high heat.
- Add onions and sausage. Cook until lightly browned. Add garlic and cook for 30 seconds.
- Add chicken broth, tomatoes, milk, pasta, salt and pepper.
- Bring the mixture to a boil, cover and reduce to low heat. Simmer for about 15 minutes or until pasta is tender.
- Turn off the heat and stir in smoked gouda. Sprinkle remaining cheese on top and cover for about 5 minutes while cheese melts.
