Grilled Fish Ingredients
- 6 oz. Mahi Mahi or Halibut
- 1 package Fajita Seasoning Mix
- 1/2 C Olive Oil
Salsa Ingredients
- 8 Roma tomatoes
- 1/2 C Red Onion, chopped
- 1 Shallot
- 2 Garlic Cloves
- 1 1/2 tsp Kosher Salt
- 1 1/2 Limes, juiced
- 2 Tbsp Cilantro, chopped
- 1 JalopeƱo, seeded and chopped
Taco Toppings
- 12 Corn Tortillas
- 5 C Cabbage, shredded
- 2 C Cheddar Cheese, shredded
- 2 Avocado, sliced
Sauce Ingredients
- 1/2 C Mayonnaise
- 2 Tbsp. Sour Cream
- 2 tsp Salsa
- 1/4 C Salsa
Directions
- Mix oil and fajita seasoning mix and brush on fish.
- Grill fish.
- Coarsely chop to small bites.
- Mix all salsa ingredients and chill.
- Mix all sauce ingredients in cruet or in blender for smoother sauce. Sauce should be able to drizzle over tacos. Add more salsa if needed.
- Put fish and taco toppings in tortilla and drizzle with sauce.
