Jenn’s Fish Tacos

Grilled Fish Ingredients
  • 6 oz. Mahi Mahi or Halibut
  • 1 package Fajita Seasoning Mix
  • 1/2 C Olive Oil
Salsa Ingredients
  • 8 Roma tomatoes
  • 1/2 C Red Onion, chopped
  • 1 Shallot
  • 2 Garlic Cloves
  • 1 1/2 tsp Kosher Salt
  • 1 1/2 Limes, juiced
  • 2 Tbsp Cilantro, chopped
  • 1 JalopeƱo, seeded and chopped
Taco Toppings
  • 12 Corn Tortillas
  • 5 C Cabbage, shredded
  • 2 C Cheddar Cheese, shredded
  • 2 Avocado, sliced
Sauce Ingredients
  • 1/2 C Mayonnaise
  • 2 Tbsp. Sour Cream
  • 2 tsp Salsa
  • 1/4 C Salsa
Directions
  • Mix oil and fajita seasoning mix and brush on fish.
  • Grill fish.
  • Coarsely chop to small bites.
  • Mix all salsa ingredients and chill.
  • Mix all sauce ingredients in cruet or in blender for smoother sauce. Sauce should be able to drizzle over tacos. Add more salsa if needed.
  • Put fish and taco toppings in tortilla and drizzle with sauce.
