Ingredients
- 3 1/2 C Frozen Shredded Hash Browns or Tater Tots
- 3/4 C Shredded Monterey Jack
- 1 C Chopped fully cooked Ham or Canadian Bacon
- 1/4 C sliced Green Onion
- 4 beaten Eggs or 1 C Egg Substitute
- 1 12 oz. can Evaporated Milk (or 1 1/2 C evaporated skim milk)
- 1/4 tsp Pepper
- 1/8 tsp Salt
- 1 package Knorr’s Leek Soup Mix
- 1/2 lb Asparagus or Mushrooms (washed and cut into 1″ pieces)
- 4 to 5 Tomatoes, coarsely chopped
- Mrs. Dash
Directions
- Spray 2-quart square baking dish with Pam.
- Arrange potatoes evenly in the bottom of the dish.
- Sprinkle cheese, ham and green onion all over.
- In a mixing bowl, combine eggs, milk, pepper, salt and soup mix.
- Pour over mixture in baking dish. Sprinkle with Mrs. Dash.
- Cover with foil or plastic wrap and refrigerate overnight.
- Bake uncovered at 350 degrees for 30 minutes.
- Remove from oven; add asparagus or mushrooms and tomatoes.
- Bake for another 30 minutes or until golden brown.
- Let stand 5 minutes before serving.
