Farmers Casserole

Ingredients

  • 3 1/2 C Frozen Shredded Hash Browns or Tater Tots
  • 3/4 C Shredded Monterey Jack
  • 1 C Chopped fully cooked Ham or Canadian Bacon
  • 1/4 C sliced Green Onion
  • 4 beaten Eggs or 1 C Egg Substitute
  • 1 12 oz. can Evaporated Milk (or 1 1/2 C evaporated skim milk)
  • 1/4 tsp Pepper
  • 1/8 tsp Salt
  • 1 package Knorr’s Leek Soup Mix
  • 1/2 lb Asparagus or Mushrooms (washed and cut into 1″ pieces)
  • 4 to 5 Tomatoes, coarsely chopped
  • Mrs. Dash

Directions

  • Spray 2-quart square baking dish with Pam.
  • Arrange potatoes evenly in the bottom of the dish.
  • Sprinkle cheese, ham and green onion all over.
  • In a mixing bowl, combine eggs, milk, pepper, salt and soup mix.
  • Pour over mixture in baking dish. Sprinkle with Mrs. Dash.
  • Cover with foil or plastic wrap and refrigerate overnight.
  • Bake uncovered at 350 degrees for 30 minutes.
  • Remove from oven; add asparagus or mushrooms and tomatoes.
  • Bake for another 30 minutes or until golden brown.
  • Let stand 5 minutes before serving.
