This can be used as a side dish or add some protein and make it a meal. It has great flavor and is pretty simple to make.
Ingredients
1 Tbsp olive oil
1 large onion, thinly sliced
1 teaspoon brown sugar
1 teaspoon Worcestershire sauce
1 1/2 cups white rice
1 (10.5 oz) can French onion soup
1 (10.5 oz) can beef consommé
1 packet onion soup/dip mix
1 1/2 cups water
5 tablespoons butter
1 cup shredded gruyere cheese
Dried thyme (optional)
Directions
Preheat oven to 425*.
Warm oil and 1 tablespoon butter in a large skillet over medium heat.
Add sliced onions, sugar, Worcestershire. Cook about 25-30 minutes, stirring often until onions are soft and caramelized.
Place rice in bottom of a greased 9×13 baking dish. Add french onion soup, beef consommé, onion soup mix, water and caramelized onion over rice and stir.
Cut 4 tablespoons butter into pats and place them evenly on rice mixture.
Cover with foil and bake 30 minutes.
Remove foil and stir rice. Bake uncovered for 20 additional minutes.
Remove from oven. Stir the rice and cover with cheese. Bake for additional 10 minutes.
