French Onion Rice

This can be used as a side dish or add some protein and make it a meal. It has great flavor and is pretty simple to make.

Ingredients

  • 1 Tbsp olive oil
  • 1 large onion, thinly sliced
  • 1 teaspoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1 1/2 cups white rice
  • 1 (10.5 oz) can French onion soup
  • 1 (10.5 oz) can beef consommé
  • 1 packet onion soup/dip mix
  • 1 1/2 cups water
  • 5 tablespoons butter
  • 1 cup shredded gruyere cheese
  • Dried thyme (optional)

Directions

  • Preheat oven to 425*.
  • Warm oil and 1 tablespoon butter in a large skillet over medium heat.
  • Add sliced onions, sugar, Worcestershire. Cook about 25-30 minutes, stirring often until onions are soft and caramelized.
  • Place rice in bottom of a greased 9×13 baking dish. Add french onion soup, beef consommé, onion soup mix, water and caramelized onion over rice and stir.
  • Cut 4 tablespoons butter into pats and place them evenly on rice mixture.
  • Cover with foil and bake 30 minutes.
  • Remove foil and stir rice. Bake uncovered for 20 additional minutes.
  • Remove from oven. Stir the rice and cover with cheese. Bake for additional 10 minutes.
  • Let stand for 5 minutes before serving.
  • Optional – Garnish with thyme.
